Innovative Technology for
Debittering Legumes
Sensory quality determines the suitability of plant-based proteins derived from legumes for specific applications. I develop innovative, highly efficient processes to reduce or eliminate bitterness and off-flavors in legumes.
DELOS (Pre-treatment process):
Thermo-mechanical treatment of legumes prior to the actual milling process to remove bitterness and reduce off-flavors. These legumes—treated without additives—can be used to produce debittered flours, protein concentrates, and starch concentrates.
ADELOS (Post-treatment process):
Targeted thermal post-treatment of the final protein concentrate to remove bitterness and eliminate off-flavors.
