Innovative Technology for
Legume Debittering
Sensory quality determines the suitability of plant-based proteins derived from legumes for specific applications. I develop innovative, highly efficient processes to reduce or eliminate bitterness and off-flavors in legumes.
DELOS (Pre-treatment process):
Thermo-mechanical treatment of legumes prior to milling to reduce bitterness and undesirable off-flavours. The additive-free treated legumes can subsequently be processed into debittered flours, protein concentrates and starch concentrates.
ADELOS (Post-treatment process):
Targeted thermal post-treatment of the final protein concentrate to reduce bitterness and undesirable off-flavours.
